Title of the Innovation: Ready-to-eat Chicken Khakhra
Brief About Innovation
Consumer demand for healthy food products has increased in the past decades. According to today’s lifestyle and working pattern the consumers are choosing ready-to-eat healthy and tasty category foods mainly includes snack items which consume very little time for cooking, high in fat, low in fibre and protein.
Chicken khakhra/chicken- wheat crisps were developed as a convenient ready-to-eat lightweight, fibre rich product. The developed product can be compared to the crispbread, crackers and matzo products from the western countries and khakhra from India. One main characteristic of these products is the low moisture content, which directly affects their crispness or hardness.
The formulation of chicken khakhra with the incorporation of functional starch makes it a fibre-rich low GI product, a good source of protein for the non-vegetarian category of consumers. It has a minimum shelf life of 6 months without the addition of antioxidants or preservatives.
