ABOUT THE TECHNOLOGY
In India, Millet plays an important role in semi-arid region of the country which contributes 60 % of the total area. In food processing sector, there is no millet based beverage in the market like soya milk, almond milk and pea nut milk which can be consumed by all the people including vegans and population with lactose intolerance/milk allergies. Moreover, the shelf life of millet milk is very short without preservative which are available in the market and the sprouted grain mixes and powders that are available in the market not readily dissolve in hot water or milk. Therefore, there is need to develop the process of preparation of millet milk/extract and it’s powder which can be stored for a longer period with no added preservative yet possessing high nutritional profile with better bioavailability of nutrients. Using this technology, the millet milk beverage is converted into powder, which has shelf life of one year at room temperature itself with high dissolution capability.
