Brief Description

The developed convenience flour is suitable for the preparation of stiff porridge (mudde or Ragi ball). Ragi mudde preparation is an art and is a very time consuming process. An unknown person cannot make Ragi balls due to tendency of lump formation in the batter but this novel instant mix flour technology is available from NRDC which can be used by anyone to enjoy mudde. The flour can also be conveniently used in the preparations like roti and such other products. The convenience flour should be packed in containers, which will safeguard the hygienic, nutritional and organoleptic qualities of the product. Product should be stored in cool and dry place. Major raw materials required to prepare this product are Finger millet, soy flour, etc.
