At
present there is difficulty in mar Process Description: Spent broilers were utilized for the preparation of cured smoked chicken. Curing mixture consisting of purified salt, cane sugar and sodium nitrate were applied by rubbing thoroughly over the dressed chicken carcass. The cured carcass is stored in a domestic refrigerator for 24 hours for curing. Subsequent to curing the cured carcass is desalinated in warm water for 1hour. The carcass is smoked for 12 hours at 550C to 600C. Later the product is allowed to store at refrigerated temperature for 24 hours. |
