At present there is difficulty in marketing heavy spent broiler to be sold as dressed chicken for consumption. consumers prefer only tender meated six weeks old broilers The now-how developed for cured and smoked chicken will help the farmers to market their spent broilers economically with increased returns as there is a growing demand for novel ready to eat meat products

Process Description:

Spent broilers were utilized for the preparation of cured smoked chicken. Curing mixture consisting of purified salt, cane sugar and sodium nitrate were applied by rubbing thoroughly over the dressed chicken carcass. The cured carcass is stored in a domestic refrigerator for 24 hours for curing. Subsequent to curing the cured carcass is desalinated in warm water for 1hour. The carcass is smoked for 12 hours at 55⁰C to 60⁰C. Later the product is allowed to store at refrigerated temperature for 24 hours.
